Baked Zucchini Fries with Marinara Sauce

I made these for a Christmas Eve appetizer and they were a hit! The sauce is downright delicious, so I urge you to go ahead and make it (it’s really fast) rather than substituting store-bought marinara. I could have ordered these in a restaurant! They tasted great and looked fabulous (I love when foods give good presentation). Great for company.

Baked Zucchini Fries with Marinara Sauce

Yield: 3 servings


Baked Zucchini Fries:

  • 3 medium zucchini sliced into 3″ x 1/2″ sticks
  • 1 large egg white
  • 1/3 cup seasoned bread crumbs
  • 2 tablespoons grated Pecorino Romano cheese
  • 1/4 teaspoons garlic powder
  • salt
  • black pepper
  • cooking spray (I recommend using olive oil spray from a Misto)

Marinara Sauce:

  • 1 tsp olive oil
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 small bay leaf
  • 1 teaspoon oregano
  • 2 Tablespoon chopped fresh basil
  • salt and black pepper to taste


  1. Preheat oven to 425
  2. Pour olive oil in a medium saucepan over medium heat. Add garlic and cook until golden. Add crushed tomatoes, salt, pepper, oregano, basil and bay leaf. Stir to combine and reduce heat to low. Cover and let simmer for 20 minutes.
  3. Beat egg whites in a bowl and season with salt and pepper. Place breadcrumbs, garlic powder and cheese in a Ziploc bag, seal and shake well. Spray a baking sheet sheet with cooking spray and set aside.
  4. Dip zucchini sticks into eggs until coated and then put a few at a time into the bread crumb and cheese mixture and shake to coat. Place the breaded zucchini fries in a single layer on the baking sheet and spray more cooking spray over the top. Bake at 425 for 20-25 minutes or until golden brown. Serve with marinara sauce for dipping.

    Can your marinara sauce be frozen… I am single, and hate making stuff that will just end up going to waste. I have frozen several of the “cupcakes” and they work wonderfully. I have also started picking some apart so instead of making the number, I divide equally to reduce and generally they turn out the same. Thanks for your input.. Keep the great recipes coming!
