Pumpkin Banana Bread & Pumpkin Spice Cream Cheese


This is a great combo for Fall or any time of year. This bread made my whole apartment smell amazing when it was baking and tasted as good as it smelled. The cream cheese was incredible and also delicious on bagels or even apple slices. The cream cheese recipe makes a lot, but it can be halved easily. The two together are heavenly and the bread also tastes great on its own or with light butter.

Pumpkin Banana Bread
Ingredients:
3/4 cup unbleached all purpose flour
1/2 cup white whole wheat flour
3/4 tsp baking soda
1/2 t salt
1 t cinnamon
1 t pumpkin pie spice
3 very ripe bananas, mashed
1/2 cup pureed pumpkin
2 T butter, softened
1/2 cup light brown sugar
1 large egg white
1 large egg
1 t vanilla extract
1/4 cup chopped pecans

Directions:
1.    Preheat oven to 325°. Spray a 9x5” loaf pan with cooking spray.
2.    Combine flour, baking soda, pumpkin pie spice and salt in a bowl with a whisk.
3.    In a separate bowl, combine butter and sugar with an electric mixer. Add egg whites, egg, bananas, pumpkin and vanilla, and beat again at medium speed until thick.
4.    Add the flour mixture and nuts to the pumpkin mixture, then blend at a low speed until combined. Be careful not to over mix.
5.    Pour the mixture into your prepared loaf pan and bake on the center rack for an hour.
6.    Let the bread cool for 20 minutes or until it is room temperature before slicing.

Yields 12 servings. WW P+: 4 per serving


Pumpkin Spice Cream Cheese
Ingredients:
8 oz 1/3 fat cream cheese (also called Neufchatel cheese)
1/2 cup canned pureed pumpkin
1 tsp vanilla
1 tsp cinnamon
1 tsp pumpkin pie spice
2 tbsp brown sugar
1 tbsp agave nectar

Directions:
1.    Combine all ingredients in a bowl and beat with an electric mixer until smooth.

Yields 12 (1 oz) servings. Weight Watchers Points Plus: 2 per serving

  1. this recipe is so good! thank you. I made it today to kick off fall and my friends loved it. I made it with 3/4c whole wheat flour and 1/2 unbleached and it was still so yummy :)

  2. I love your site! I wanted to make something Fall-y today while using up some bananas that I had at the same time. I came to your site first with hopes of finding something and here this was. I only made the bread recipe - it made 3 mini loaves and tastes great warmed up a little bit with a little light butter! Yum!
