Bacon, Egg & Cheese Breakfast Quesadilla

This is one of the quick & easy go-to breakfasts I know I’ll usually have time to put together in the morning before work. You could also easily microwave the tortilla for 15 seconds or so until slightly warmed, spread it with the cheese and fill it with the scrambled egg whites and bacon bits to make a breakfast burrito using the same ingredients. You may have noticed that Queso Fresco & Chipotle is my favorite Laughing Cow cheese flavor (I always recommend that one – it gives everything a little kick) but you could use a different flavor if for some reason you don’t love that one as much as I do.

Bacon, Egg & Cheese Breakfast Quesadilla

Yield: 1 serving

Ingredients:

  • 3 large egg whites
  • 1 reduced fat, whole wheat 8” tortilla
  • 1 Laughing Cow Queso Fresco & Chipotle cheese wedge (the original “recipe” calls for 1/3 c shredded light swiss but I prefer the Laughing Cow. I’m not a big swiss fan, so I’ve also made this with cheddar, as you can see pictured. Using shredded cheese in place of the LC changes the P+ value)
  • 1T Hormel 50% less fat real bacon bits (usually found by the salad toppings)

Directions:

  1. Scramble the 3 egg whites in a nonstick pan sprayed with cooking spray OR microwave them in a small bowl in 30 second intervals until cooked (my microwave takes three of these) and then use a fork to stir the egg whites into large scrambled pieces.
  2. Spread the Laughing Cow wedge over the tortilla (or sprinkle the shredded cheese over half). Place the tortilla cheese side up in a nonstick skillet over medium-high heat and sprinkle the bacon bits on half the tortilla. Top the bacon bits with the scrambled egg whites. Fold the bar half over the filled half and cook about 2 minutes or until tortilla is lightly browned. Flip the tortilla (remember to flip carefully toward the fold so that the filling doesn’t spill out the other side mid-flip!) and cook another 1-2 minutes. Transfer to a plate and cut into triangles.

    Just came across your site after seeing it recommended on WW Boards- gosh I feel like I’ve been missing out!

    Question regarding tortillas- what brand do you use? I feel like this is the never ending questin with WW, “whats the lowest point but still flavorful tortilla”.

    Thanks for all the great recipes, I’ve already printed several (those lasagna cupcakes will have a special place in my belly come this weekend!

    Thanks Emily! The La Tortilla Factory site says they are sold at Kroger but wouldn’t you know I have *yet* to see them there! Guess I will have to brave the masses and try Wal-Mart to see my local Wal-Mart has them.

    Hope you can find them! One of the million reasons I love Wegmans (my local grocery chain) is that you can look up any product on their site and they will tell you exactly what aisle/section to find it in at your location. It’s amazing! I wish everywhere had that because I find that items like tortillas are generally spread out into all different sections. Enjoy!
