Strawberry Cheesecake Popsicles

I’ve been meaning to make these ever since I discovered that Jello now makes cheesecake flavored pudding (it’s totally possible they’ve been making this forever, but I only noticed it a few months ago). I love making popsicles in the summer. It’s so easy to pour in your favorite juices or pureed fruits and have a healthy grab-and-go snack! I’ve seen a lot of similar popsicle recipes popping up on other blogs lately (first Strawberry Shortcake Popsicles on Baker’s Royale and then Strawberry Pistachio Pops on Recipe Diaries) and they reminded how much I’ve been wanting to make these! I decided I couldn’t wait for summer. Cheesecake with fruit topping is one of my absolute favorite desserts and I’m so excited that I can get the same flavors in these popsicles for just 1 WW P+! Bill Cosby would be proud.

I have had the same popsicle molds for a few years now and I have no recollection of where I bought them anymore (Target? Walmart? Wegmans?) but they look exactly like these ones I found on Amazon. These also look fairly similar. Mine each hold about ½ cup of liquid. If you have larger molds you may want to change the serving size. If you don’t have popsicle molds you could always use Dixie cups and wooden popsicle sticks, but I think popsicle molds are a great investment so I recommend just getting a set!

Strawberry Cheesecake Popsicles

Yield: 8 popsicles

Ingredients:

  • 1 box Sugar Free, Fat Free Cheesecake Flavored Jello Pudding Mix
  • 2 cups cold skim milk
  • 1 lb fresh strawberries

Directions:

  1. In a medium bowl, beat together the pudding mix and milk with a whisk until combined and refrigerate for a few minutes to slightly thicken.
  2. Cut the tops off the strawberries and puree them with a blender.
  3. Layer the pudding and strawberry puree in alternating layers into 8 popsicle molds and place in freezer for several hours until frozen through.

    These look delish! I didn’t know they had cheesecake flavor in the sugar free, and I would definitely buy it to make a frozen dessert with it.

    Mary – I loved pudding pops when I was a kid! I don’t know why they ever did away with them, but oh well – we can make our own!

    made these last night, but with the white chocolate flavor instead (sold out of cheesecake!). they came out fantastic!! now just need to buy actual popsicle molds for next time…dixie cups worked in a pinch, but the shape makes them kind of awkward to eat haha

    Absolutely! I would just let the berries thaw first so that they’ll puree easily into pourable liquid. I’ve tried to puree frozen fruit before and it didn’t quite work out the way I’d hoped, lol.

    I love making my own popsicles. Love the cheesecake pudding, so this sounds amazing as always. I am thinking about doing chocolate and raspberries… although its been crappy weather in Chicago so I may try these memorial day weekend!

    You’re right about defrosting the strawberries!

    I tried processing them frozen at first, and my Cuisinart shot across my countertop like it was possessed. Luckily no one was hurt (including the Cuisinart.)

    These popsicles were AWESOME! I can’t wait to try again with different pudding flavors.

    Made this today…the pudding and strawberry puree all mixed it…couldnt get it to separate. How did you pour it in without getting it on the sides?

    I’ve been googling like crazy, and I can’t find the ingredients in the pudding mix. Any chance you have this on hand? I’d love to make a vegan version of the pops.

    You’re in luck! I just checked and I had an extra box in my kitchen. I’m not sure whether it’s vegan or not (the ingredients are a mouthful) but I’ll type out what’s here and you can decide! The pudding ingredients are: modified cornstarch, maltodextrin, tetrasodium pyrophosphate, disodium phosphate, “contains less than 2% of natural and artificial flavor” (whatever that means), salt, calcium sulfate, xanthan gum, mono and diglycerides, aspartame and accesulfame, yellow 5, yellow 6, artificial color, BHA (preservative).

    Thank you! I’ll probably make pudding with coconut or hemp based milk (for some reason, the pudding doesn’t form right with the fats in soy milk unless you double the pudding mix)

    how many calories are in these? i didn’t see it in the recipe, i just saw how many ww points they were.

      At the beginning of the year I started calculating the nutrition information for my recipes, and since then I have been going back and calculating this information to my past recipes as well. It takes a long time! If you need the nutrition information for this specific recipe before I am able to get to it, feel free to run the ingredients through the free recipe builder on myfitnesspal.com. That’s what I do!

    So delicious!!! The strawberries were a little tart on their own. So, for the second batch, I mixed the pudding and strawberries together!
