Strawberry Mint Lime Sorbet

This sorbet is such a refreshing, light and sweet treat. The recipe couldn’t be simpler and with all natural ingredients it’s a dessert you can feel good about. Sweet strawberries and tart lime flavors blend together beautifully and the mint adds a surprising twist. The consistency of this sorbet was perfect too. It’s a bit melted in my photos because it was sitting out for several minutes while I took pictures, but it was firm but soft both right out of the machine and later after being in the freezer. If you don’t have an ice cream maker, the original recipe I adapted this from used frozen strawberries, thawed for 20 minutes and then just froze the mixture after blending. I haven’t tried it that way personally, but it’s another option.

I do absolutely recommend the ice cream machine I have. I use this Cuisinart model and it’s so fast and easy to use. You simply keep the machine’s bowl in your freezer and whenever you want to make ice cream or sorbet you mix up the ingredients, put the bowl on the machine, start it up, pour in mixture and in less than 20 minutes you have ice cream! No rock salt or ice required.

Strawberry Mint Lime Sorbet

Yield: 5 (1/2 cup) servings

Ingredients:

  • 1 lb fresh strawberries, hulled (stems cut off)
  • Juice from one lime
  • ¼ c of finely diced mint leaves
  • 1/3 c sugar

Directions:

  1. Combine all the ingredients in a blender or food processor (I used my immersion blender) and run until thoroughly combined into liquid form.
  2. Put the entire mixture into an ice cream freezer/maker and freeze according to manufacturer’s instructions. If the ice cream has not yet reached your desired consistency, transfer it to a sealable container and put in the freezer until fully frozen. Freeze any leftovers.
