Oh, pizza. So delicious and versatile. When you bite into this particular pizza, get ready for a mouthful of creamy Alfredo, stringy hot Mozzarella, garlicky greens, big chunks of chicken and thin, crispy crust. It’s creamy, dreamy Heaven in your mouth. Everyone knows that Alfredo sauce is traditionally a calorie bomb, but I’ve had great results with Classico brand light Alfredo sauce. It’s rich and creamy without being heavy and with significantly fewer calories. I loved this with the spinach cooked with garlic, but you could certainly add different vegetables (broccoli, peppers etc) depending on what you like with Alfredo. If you like pizza or Alfredo (or particularly if you love both), this is for you!
Chicken Alfredo Pizza
Source: Emily Bites OriginalIngredients:
2 cups fresh spinach, chopped
1 clove garlic, minced
Boboli 12” Whole Wheat Thin Pizza Crust
1/2 cup light Alfredo sauce (I used Classico and I highly recommend it)
½ cup cooked boneless, skinless chicken breast, shredded or chopped
¾ cup 2% reduced fat shredded mozzarella cheese
1 ½ t grated Parmesan cheese
Directions:
1. Preheat the oven to 450.
2. Lightly mist a skillet with cooking spray and bring over medium heat. Add the spinach and garlic and cook, stirring occasionally for a few minutes until the spinach is wilted and the garlic is golden and fragrant. Remove from heat.
3. Spread the Alfredo sauce evenly across the top surface of the pizza crust, leaving at least a ½ inch edge around the outside. Spread the spinach and garlic evenly over top of the sauce. Sprinkle the chopped chicken pieces over the top, followed by the mozzarella cheese. Finish the pizza by sprinkling the Parmesan cheese over top.
4. Place pizza on a foil covered baking sheet, a pizza stone (my preference) or straight onto the oven rack (depending on how you like your crust) and bake for 8-10 minutes.

DeleteFor individual pizzas that are still low in points use Pita bread (white or wheat/with or without pockets). We have found these to be just as tasty and fun because we can individualize our pizza (I add crushed red pepper to everything and my girlfriend doesn't really like that.)

Yeah, I occasionally make personal pizzas using english muffins or flat outs. It's good for a quick meal! The Boboli crusts are my favorite though.

ReplyDeleteThanks! I live by myself so I am usually cooking just for me. Luckily I love leftovers and I get excited to eat things again the next day if I liked them, so usually I eat whatever I make for the next few days. If a recipe makes a lot of servings I usually freeze some of them. That's great because then you have ready made meals to heat up when you don't feel like cooking!

ReplyDeleteFound your blog via Amee's Savory Dish. One option I love for at home pizza is prepared unbaked dough you can get from Trader Joes, Sprouts (which is in SoCal) or many pizza restaurants sell their dough fresh and you can bake at home. This way you control the thickness of your crust and there is nothing like seeing fresh dough bubble up in the oven!
Yes, my grocery store sells that unbaked dough too :). I'll probably try it sometime. I just love the convenience of the Boboli crusts. Thanks for the suggestion!

DeleteWow - so many of my favorites all rolled into one great pizza :-) I think tortillas make a great pizza crust alternative too. One of my favorite pizza combinations is BBQ sauce, chicken, broccoli, red onion, and 3-cheese blend.

ReplyDeleteThanks Kelly! I think I actually used leftover rotisserie breasts for this, but there are tons of great, easy ways to cook the chicken. I often grill it on my George Foreman grill. Baking it is always an easy solution. You can boil it on the stove top or cut it into thinner strips and cook it in a nonstick skillet. You can even cook the chicken breasts in the crock pot with some water while you're at work and then shred it when you get home! This pizza was FANTASTIC! I'm usually not a huge leftover fan, but have been eagerly eating these! :) I cut mine into 8 slices, which made it 4 P+ per slice. (note: I did use a different crust, so that could have affected the points. I used a Freschetta Golden Wheat crust, just because that's what I had on hand).

ReplyDeleteJust made this. I added broccoli, red onion, peppers and thin sliced tomato on top in addition to the spinach. It's amazing. I never would have tried boboli but it wasn't as bad as I thought it would be! I actually really enjoyed the crunch I got by leaving it on the rack. I also definitely appreciate how quick it made everything. Really awesome on a weeknight.
ReplyDeleteMy boyfriend and I are doing WW together and so I've been trying to win him over with some really good recipes. He gave this one an 8 (he's a pretty stingy rater and there's only a few things he gives above a 7.5). He said he'd definitely eat it again which is a relief cause I loved it!!
