Holly Bunches


As Will Ferrell says in the movie Elf, “The best way to spread Christmas cheer is by singing loud for all to hear.” The second best way (which he somehow failed to mention) is probably to make these Holly Bunches. They’re so quick and easy to make and the results are fun, festive, adorable and delicious. I absolutely love the cinnamon flavor from the red hot candies mixed with the marshmallow-y goodness of the coating. It’s perfect. These are an ideal treat to bring to a holiday party or cookie exchange because they stand out on a buffet table and everyone loves them. I will warn you though – there’s food coloring in them, so you may end up with a green tongue after eating. It’s so worth it though. With so many decadent, calorie-laden foods being passed around this time of year, it feels good to whip up a treat that gives you the sweet & festive flavors you crave guilt-free.



Holly Bunches

Ingredients:
½ cup (one stick) light butter
30 regular-sized (not mini) marshmallows
1 t green food coloring
1 ½ t vanilla extract
4 cups cornflakes cereal
72 pieces red hot cinnamon candies


Directions:
1.    Unroll some parchment paper and set aside.
2.    Bring the butter and marshmallows over medium-low heat in a large pot, stirring constantly until melted. When melted, remove from heat.
3.    Add food coloring and vanilla and mix thoroughly. Stir in corn flakes until thoroughly coated.
4.    Drop the mixture by generous tablespoons onto the prepared parchment paper, making 36 piles. On each holly bunch, stick two cinnamon candies on top. Let the bunches cool for at least 30 minutes.
