Woah, is this my second breakfast recipe in a row? I haven’t posted very many breakfast recipes in the past few months and now that Mother’s Day brunch is imminent I suppose I figured it’s time to make up for it! I actually can’t believe it has been so long since I posted a baked oatmeal recipe, because I love baked oatmeal. These particular Chocolate Cherry Baked Oatmeal Singles are super chocolatey from both cocoa in the dry ingredients and mini chocolate chips scattered throughout. They’re also hearty and filling and have bites of sweet, juicy cherries in every cup. I think raspberries would work just as well, so if you’re having trouble finding cherries or you’re just in a raspberry mood, try those instead ad just use raspberry yogurt as well. 

Baked oatmeal singles are great for a grab-and-go breakfast or as a filling snack. Each one has 5 grams of protein to keep you feeling satisfied and for only 127 calories, you can indulge in a sweet, chocolatey treat and feel great about it! Chocolate Cherry Baked Oatmeal Singles

Chocolate Cherry Baked Oatmeal Singles

These muffin-sized portions of baked oatmeal are super chocolatey from both cocoa powder and mini chocolate chips and have bites of sweet, juicy cherries in every one!

Ingredients

  • 2 cups old-fashioned oats
  • 3 tablespoons unsweetened cocoa powder
  • 1/3 cup packed brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg whites
  • 1 large egg
  • 3/4 cup skim milk
  • 1 (5.3 oz) container nonfat Cherry flavored Greek Yogurt, stirred (I used Yoplait Greek 100 Black Cherry)
  • ½ teaspoon vanilla extract
  • ¼ cup mini chocolate chips
  • 2/3 cup pitted & chopped sweet cherries, fresh or defrosted from frozen

Instructions

  • Preheat the oven to 350. Lightly mist 12 cups in a muffin tin with cooking spray.
  • Combine the oats, cocoa powder, brown sugar, baking powder and salt in a large bowl and stir until thoroughly mixed.
  • In a separate bowl, whisk together the egg whites, egg, milk, yogurt and vanilla. Add the wet ingredients to the dry ingredients and stir until blended together. Stir in the chocolate chips and cherry pieces.
  • Spoon the oatmeal mixture evenly into the prepared muffin cups. Bake uncovered for 18-22 minutes or until oatmeal is cooked through and a toothpick inserted into the middle comes out clean.

  1. These look SO GOOD! I want to make them immediately.

    • They are delicious! I just started Weight Watchers and I am so happy to be finding all these low-point, delicious treats. I froze them individually in plastic wrap and when I want something sweet, I just defrost and warm one in the microwave and put a little fat free whipped cream or a tiny little scoop of sugar free vanilla ice cream on it. It just melts into the chocolate-cherry yumminess. Thanks for sharing this recipe!

  4. I just took these out of the oven and had 2 for lunch. Delicious. wow – and really easy to make – I used fresh cherries. Perfect snack to have around. even my kids enjoyed them. No liners for me – just sprayed the muffin pan with Pam.

  6. SOOO good!! I ended up using low-fat regular raspberry yogurt and frozen cherries. My fam ate these up in a flash! I bought some extra rasp greek this week, so I hope to make them with that and frozen raspberries. Awesome chocolate fix that can double as breakfast! 🙂

  7. I made this recipe in a casserole pan to cut into squares instead of muffins. It was so delicious. I had to stop a few places to find frozen cherries, but I was bound and determined (and so glad I perservered)!

  10. These were awesome! I had to use raspberries since I couldn’t find cherries but they’re still amazing. I’ve been eating them for a night time snack, they’re perfect as dessert! I can’t wait to make them again with cherries.

  12. I cant fimd cherry yogurt. Can i use normal.yogurt?

  13. I made these this morning and the batter was very runny and they took 10 min longer to cook (total 30 min). I used frozen cherries, defrosted and drained. Should I have let the batter set for a little while before putting it into the muffin tins? They stuck a bit to the muffin tins on the upper sides as I don’t think I sprayed enough in spots. Just had to use a knife to run around those areas. These are tasty.

  16. I made these a few weeks ago and love them. I am a huge chocolate addict. I made them exactly how the recipe states. They freeze really well. I have 3 for breakfast sometimes and usually 1 after dinner to get my nightly chocolate/dessert fix. They are almost all gone. I am going to make them again. I think i might use bananas instead of cherries to see how it turns out.

  18. Emily! I LOVE these. 🙂 Just had my first taste for breakfast at work and it’s pretty early for me to be so excited about anything. I have made your blueberry ones and love those, but honestly I was expecting not to get the cherry flavor from these and was prepared to be a little disappointed. Not a bit. These are my new favorite way to shake up my breakfast routine.

These were fabulous!  However I can’t have cherries & saw a reference to using raspberries in place of the cherries & that’s what I did.  Raspberries & raspberry yogurt instead of cherries.  Of the 7 different oatmeal singles that I’ve tried, these are the best with the banana chocolate chip a close second!  My daughter & I have enjoyed all 7 of the oatmeal singles that I’ve made.  Thank you for such great delicious recipes!
