    3. SOME really good seafood recipes are on McCormick.com (the seasoning company) website. Got a GREAT Shrimp pasta with spicy tomato sauce. It was YUMMY!!! only 245Calories/ 1 fat/20g PROTEIN

    1. Thanks, Mary! I'm working on it, but it takes a long time because I have a lot of recipes! I am running them through the recipe builder on myfitnesspal to determine the NI, so if you come across one I haven't done yet, you can always run it through there and get all the info you need. Hopefully I will be all caught up soon! :)

    1. To be 100% honest, I just googled pimento cheese because I don't believe I've ever had that before! It appears to be a southern thing that my yankee-ness has prevented me from experiencing :). It does sound good though! I will take a look at it.

    1. I haven't posted one yet for just meatballs (though I probably should, now that you mention it!). I usually make mine in the crock pot, but I did include a recipe for baked meatballs in my Spaghetti & Meatball Cups recipe. You could definitely just make the meatballs from that and serve them in other ways!

  15. Hi Emily, I was just turned on to your site and think it is wonderful. I have had weight loss surgery and now following WW to help me maintain and try to slim my husband down. I tried the Taco Cupcakes and we both thought they were wonderful, I even made a double batch and took them to work the next day for my friend that are also on WW. Buffalo Chicken cupcakes are next maybe even today! Keep up the good work we all love it!

    1. Soups and chilis are great for freezing. If you cook on the soups link in my sidebar categories any of those should work. Most casseroles, lasagna, stuffed shells, etc freeze well. Crock pot meats like BBQ Beef or Mexican Pulled Pork Tacos. It really depends on what you like to eat and how well you package it! Hope that helps :)

    1. Sure! Most of my recipes have the carbs per serving listed, so if you find out from your family members how many carbs they are supposed to eat per meal you can go off of that and just make an effort to use whole grains and complex carbs rather than white carbs. I'm obviously not a doctor and everyone has a different definition of what constitutes "low carb", but here are a few off the top of my head that I personally think would work (please consult with your family members first to check whether they feel these fit with what their doctor has told them to eat):

      Cheeseburger Lettuce Wraps
      Asian Chicken & Vegetables with Spicy Peanut Sauce
      Sausage-Stuffed Baked Zucchini
      Buffalo Chicen Roulades
      Stuffed Pork Tenderloin
      Any of the wonton cupcake recipes

      I'm sure there are several more that would work. Hope that helps!

    1. I usually take dinner leftovers for lunch. The "cupcake/muffin" meal recipes and many of the others are easy to make ahead and freeze and then grab to reheat for lunch. I think making a wrap, sandwich or salad from the crock pot meats on my site is another good idea to bring for lunch!

    1. Sorry Jenny, I'm just not familiar enough with what products contain gluten to feel comfortable/confident making a category like that. Especially since it's in things I would never imagine (like sauces). I wish I could be more helpful, but you likely know WAY more about what's gluten-free than I do :/

  25. Do you think the cupcakes could be made the night before and then pop them in the oven for dinner the next day? Not sure if the wrappers would get soggy? I have an 11 month old and 3 year old so prep time needs to be very quick and easy. : )

A little bummed tonight as I am looking for a LOW CAL/LOW FAT recipe where APPLES are the main star of the dish. I don't see anything listed with apples.   28. Hey there. I just wanted to thank you so much for your creative recipes. I adore the chicken parmesan muffins/cupcakes. It has become my favorite meal. I roast a spaghetti squash to go with them and it's such a yummy treat! My husband and daughter don't even know they're eating a WW recipe.     I thought you might get a kick out of this. I have told so many people about your recipes at work we're having our own version of cupcake wars using your cupcake recipes. The savory ones..lol.

    So on Nov 5th, the 14 of us that are participating have to bring in 14 of the cupcake we picked (I of course did taco..lol)to exchange. I invented this for selfish reasons, I wanted to try all of your cupcakes but didn't want to wait.

  30. im a girl who loves to eat and who spends 95% of her time cooking. so when i decided to get my life under control and start the weight watchers program i was scared i was going to have to give up the things i loved. Not only has ur website shown me that healthy food can still fun, but that it can be full of bad ass flavors and that dieting doesnt have to be boring. Im 30 pounds down and counting :)

So far I have made the Diet Coke Cupcakes(made the cream cheese frosting but served it on the side for dipping strawberries!),Taco Cupcakes, French Dip, and a version of the Enchilada Casserole!I also tried a crockpot Italian Beef from one of the links you had posted! Our family loved it. Everything has been amazing! I have a list a mile long to try in the future. At almost 25lbs down and my hubby has lost 11 now, we apprecite the new and creative ideas!
