It’s main course “cupcake” mania! The top three recipes on my site right now are Taco “Cupcakes”, Macaroni & Cheese “Muffins” and Lasagna “Cupcakes”. I’ve received your emails and seen your comments and posts requesting more mini-meal recipes, and I’ve been brainstorming tasty combinations like crazy! This one seemed like a sure winner. Who doesn’t love cheeseburgers? These individual “cupcakes” will give you all the flavors you’re craving: seasoned ground beef, two different types of gooey cheeses, juicy tomatoes, sautéed onions, sweet ketchup and tangy mustard. Serve these as a main course or individually as a fun appetizer or dish to pass. Main course “cupcakes” make great game day food for football season!
I have a lot more ideas for fun main courses that fit in a muffin tin, so expect to see more coming your way! Not all will include wontons, but it’s nice to have a few recipes that do since the package comes with so many. I have several more wonton recipes planned as well (think appetizers and desserts). Stay tuned!

Cheeseburger "Cupcakes"
Source: Emily Bites OriginalIngredients:
¼ c onion, finely chopped
½ lb 95% lean ground beef
1 T McCormick Hamburger Seasoning
4 oz mushrooms, chopped
4 Laughing Cow Queso Fresco & Chipotle wedges, chopped
3 T ketchup
1 T mustard
16 wonton wrappers (typically found in the produce section)
½ c tomatoes, chopped
4 oz (1 cup) reduced fat 2% shredded cheddar cheese
Directions:
1. Pre-heat the oven to 375. Lightly mist 8 cups in a muffin tin with cooking spray and set aside.
2. Mist a large skillet with cooking spray and bring to medium heat. Add chopped onions and sauté until cooked. Add ground beef and Hamburger seasoning and cook until meat is browned. Add mushrooms and continue to cook, stirring occasionally, for a few minutes until mushrooms are browned as well.
3. In a microwavable bowl, combine meat/mushroom mixture, cheese wedges, ketchup and mustard and stir. Microwave for one minute on high. Stir to combine until meat mixture is fully coated.
4. Push a wonton wrapper into the bottom of each of the eight sprayed cups in the muffin tin. Using about half of the meat mixture, spoon evenly into the wonton wrappers. Follow by sprinkling some of the chopped tomatoes into each cup (using about half the total tomatoes). Sprinkle about half the cheddar cheese evenly over the top of each cup. Press another wonton wrapper on top and repeat the layering steps with the remaining ingredients.
5. Bake for 18-20 minutes until golden brown. Let cool 5 minutes before removing from muffin tin.

ReplyDeleteGreat idea Kimberley!
ReplyDeleteI have looked (and asked) at Trader Joe's, Fresh Market (like Whole Foods), Acme (convetional grocery store) and Target, but have not found wonton wrappers anywhere! Do you think I could use phyllo dough?
ReplyDeleteAt safeway they are by the bagged salads and tofu. Hope that helps you.
Deletei found mine at food lion but Walmart has em i hear! produce section by sugar snaps!!!
DeleteI got wonton wrappers at Albertsons. I love all the cupcake recipes! I am trying this one tonight.
ReplyDeleteI had trouble finding wonton wrappers so We used Spring Roll wrappers in place of worked well...thanks for sharing this recipe..
ReplyDeleteI found them at Safeway, had to ask an employee (they were in produce).
ReplyDeleteI made these tonight and they are delicious! My boyfriend already asked when I'm making them again. Thanks for posting!
ReplyDeleteAnother hit at our house, Emily! My husband raved over this - he loved the crunch of the wonton, and the bite of the mustard. I used some sundried tomato and garlic and herb Laughing Cow, since I was out of the chipotle. I also topped my son's cupcake with some diced dill pickles - he liked the addition. I'm excited that there are wonton wrappers left - we'll try the Buffalo Chicken cupcakes next!
ReplyDeleteYay, glad the whole family liked them, Lori! :)
ReplyDeleteI just found your blog today and I made these for dinner tonight and they were delicious!!!!!! My husband loved them too! I did use ground turkey instead of ground beef but they still came out awesomely yummy!!Thank you so much for sharing! I am going to make your sausage, egg, and cheese hashbrown cups in the morning, I can't wait! I'm sure they will be just as tasty!
ReplyDeleteThanks Cindy! So glad you loved them. I saw you comment on FB before I saw this one so I'm also glad you loved the hash brown cups. Keep posting, I love getting feedback!

ReplyDeletefor those having trouble finding wonton wrappers i know some local food stores will not have then... I actually went to a Asian food market to get them and go about 72 wrappers for only $1.38.... I CAN'T wait to make all the different "cupcakes"
ReplyDeleteHope you like them! Let me know which is your favorite.
DeleteThey sell wonton wrappers at walmart with the organic produce.
ReplyDeleteYummy! I made these tonight, but didn't have the Queso cheese, so I used two wedges of Swiss and added a little more cheddar cheese to the hamburger mix and they turned out yummy! :-)
ReplyDeleteHappy to hear they were a hit!
DeleteThese were so good! Great for a hamburger craving!
ReplyDeleteYay, glad you liked them!
DeleteThese were fantastic!!! I made them last night for my family (hiding in the kitchen while I chopped all those mushrooms - so my sons wouldn't see). They were a hit! They can't wait to have them again.
ReplyDeleteMy grocery didn't have the McCormick's hamburger seasoning, so I used Weber Gourmet Burger. They came out well . . . we decided they were almost like a creamy philly cheesesteak. Well done. Can't wait to make more 'cupcakes' soon!
So happy your family loved them (and that your sons didn't notice the hidden mushrooms, haha)!
DeleteCan I pls have the nutritional info...thank u
ReplyDeleteonly question i have for these is how to keep the wonton wrappers crisp? I live in high altitude and the edges are crisp but not the rest of it. I put them in for 17 min & they weren' crisp and then for another 5 min and still aren't crisp? What is your trick for keeping the wrappers crisp?
ReplyDeleteThey actually aren't meant to get crispy all over. Only the tops get crispy where the wonton edges stick out of the pan. Hope you like them!
DeleteEmily, I just found out about your website I want to say thank you so much for taking the time to all this work for those of us that are doing ww. It's wonderful site and you have awesome recipes thank you so much again.
ReplyDeleteKay
Thanks Kay! Let me know what you end up trying!
DeleteSooo happy I found you on pinterest! I too have gone main meal muffing nuts! Found lasagna on pinterest then did, meatloaves, crustless quiche, and pizza muffins. I have had a few more ideas but as life is crazy haven't gotten around to trying more. I love that you have done the P+ for us. Nice to not have to measure after you make a meal for the whole fam. One thought for you have you seen the dumpling wrappers? They are round, I used them instead for the lasagna and was able to bump up the amount of meat and keep the same points as the trade off of no corners on the wrappers.
ReplyDeleteAwesome, I'm glad you found me too! Meals in muffin tins are so fun and it's easy to creative with them. I haven't seen the dumpling wrappers but I'll have to look for them. Thanks for the head's up!
DeleteI'm thinking Reuben cupcakes! I prebake my wonton wrappers for a few minutes first ... works like a charm!
ReplyDeleteGood tip, I'll have to try that. Reuben cupcakes sound yummy!
DeleteI can't wait to try these, although the french dip ones will probably come first! (FYI, when you give the yield as 8, you say "lasagna cupcakes. Just thought you might want to change it!)
ReplyDeleteAhh, thank you! I always use a past recipe as a template when I'm typing a new one and I must have forgotten to change that part. Fixed!
DeleteHope you like them :)
Loved these! Thank you so much!!! :)
ReplyDeleteHappy to hear it!
DeleteThese are AMAZING! So flavorful... Delish!
ReplyDeleteGlad you liked them! :)
DeleteI started WW and just found your sight can't wait to try all of these. It's nice that you have figured the points for them also. It really helps us that have just started. Going to let other WW's know about this sight. Thank You.
ReplyDeleteThanks so much! Hope you enjoy the recipes. Good luck on Weight Watchers! :)
DeleteFound you via 24/7 Moms! Thanks for the recipe!
ReplyDeleteOh cool, I didn't even realize they posted about me! Thanks for the head's up :)
DeleteI made these on Saturday and my husband loved them too! Thanks for the recipe. He wanted to go back for seconds and I told him the leftovers were for me and my co-worker for lunch on Sunday! Will be making again soon! :)
ReplyDeleteHaha, I am protective of my leftovers, too! I am happy you both liked these :)
DeleteI cooked these today - had to make a substitution with the cheese and use philadelphia with a splash of hot sauce as they don't do that particular Laughing Cow over here in the UK in my supermarket. Absolutely delicious though - Can't wait to eat them tomorrow for lunch at work! Thanks so much for posting this recipe!
ReplyDeleteBecki
I'm so glad you loved these and that you were able to make good substitutions. Thanks for letting me know!
DeleteAny thoughts on how these would hold up frozen/reheated?
ReplyDeleteI have never frozen them but have had many readers say the freeze and reheat just great!
DeleteIs the Laughing cow Queso Fresco and Chipotle really hot/spicy. Would cream cheese work the same without the spicy?
ReplyDeleteIt's not spicy at all, it's just a little Mexican flavored.
DeleteI made these last night and they were the BEST! I have told everyone I know about your blog. The cheese was not hot at all thank you so much.
ReplyDeleteThanks for spreading the word, Sara! I'm glad you loved these :)
DeleteAwesome!! Just started weight watchers, husband also enjoyed these. :)
ReplyDeleteVERY GOOD. i made them tonite and added chopped up pickle. was SUPER good!
ReplyDeleteI also added the chopped pickle. These were really good and pretty easy to make. I'm glad I have about 20 wonton wrappers left so I can try out another cupcake... really cool idea!
ReplyDeleteOMG Just found your website about a week ago and this is the 3rd recipe I have tried, this is my favorite so far. I had to make my own hamburger seasoning because i couldn't find any at the store. Also i had to omit the mushrooms i don't like them.
ReplyDeleteThanks, keep it up.
I love your website AND your recipes! I pinned a whole bunch, finally I just started to follow you so I could get updates. I made your Cheeseburger "Cupcakes" tonight and they were delish! I love how easy they were, and they can be adapted or modified easily, too. I'm going to be posting some of my fave recipes soon, and you'll be at the top of the list (don't worry, you'll get all the credit!). Thanks so much!

These look amazing. I can't wait to try them. How do they freeze? Has anyone tried that yet? I'm always looking for new ways to feed my freezer.
ReplyDeleteOh boy these are delicious with lots and lots of flavor. I must say, they are quite cute too! Thanks for the food fun.
ReplyDeleteI just found your blog earlier this week. Made these tonight and loved them. My hubby even loved them, saying he was getting hungry while I was cooking. This is a recipe that even he can make. He is going to try the lasagna cupcake this week. Thanks for sharing. Can we submit recipes for you to lighten up and post? Love your blog and have signed up so I don't miss a thing. I'll be telling all my WW friends about it also.
ReplyDeleteIt is just my husband and myself, so finding a dinner for both of us, is not always easy....but... this was a HIT for dinner tonight! He told me this is 'a keeper" ... thank you and will defiantly try some of your others.. thanks
ReplyDeleteI love these as well as all of your cupcake recipes. I just wanted to let you know though when I plugged in the nutritional value my calculator came out to be 5 PPV.
ReplyDeleteI'm trying these tonight. I've been enjoying your site!!! Thanks for all the great ideas :-)
ReplyDeleteI just recently found you and I'm so glad! This was the first recipe I tried and they were amaaaaazing :) Hubby and I both loved them so much. The only Laughing Cows I had were Swiss or French Onion, so I did 2 of each. So delicious! Tonight I'm trying the lasagna cupcakes :)
ReplyDeleteWe just had these for the first time tonight, I've been meaning to make them for quite some time now. They were absolutely delicious!
ReplyDeleteMade these for the first time for the Super Bowl and they were a hit. Made them again and took them to my sister-in-law who is recovering from an automobile accident, she loved them. With all of the other food that had been brought to the house, she was hiding some of these for herself. :) Love your "cupcake" ideas. Going to try the French Dip ones next. Thanks!
ReplyDeleteMade these as an appetizer for my son's birthday party and they were a hit. I also made a turkey version since we have several folks who don't eat red meat. Both were quite tasty and I rec'd lots of compliments on the food - thanks! One thing...I was trying to pull the recipe up on my phone (didn't want to have to boot up the computer during the chaos of getting ready) and the link to go to the FAQ page is broken on this page (the link that is embedded in this post). Again, thanks for a great recipe!
ReplyDeleteWhen I made the cupcakes, I had trouble getting the wontons to brown on the bottom which caused them to be soggy. Any ideas on how to prevent that? Other than that, delicious!
