Cheeseburger "Cupcakes"


It’s main course “cupcake” mania! The top three recipes on my site right now are Taco “Cupcakes”, Macaroni & Cheese “Muffins” and Lasagna “Cupcakes”. I’ve received your emails and seen your comments and posts requesting more mini-meal recipes, and I’ve been brainstorming tasty combinations like crazy! This one seemed like a sure winner. Who doesn’t love cheeseburgers? These individual “cupcakes” will give you all the flavors you’re craving: seasoned ground beef, two different types of gooey cheeses, juicy tomatoes, sautéed onions, sweet ketchup and tangy mustard. Serve these as a main course or individually as a fun appetizer or dish to pass. Main course “cupcakes” make great game day food for football season!

I have a lot more ideas for fun main courses that fit in a muffin tin, so expect to see more coming your way! Not all will include wontons, but it’s nice to have a few recipes that do since the package comes with so many. I have several more wonton recipes planned as well (think appetizers and desserts). Cheeseburger "Cupcakes"

Ingredients:
¼ c onion, finely chopped
½ lb 95% lean ground beef
1 T McCormick Hamburger Seasoning
4 oz mushrooms, chopped
4 Laughing Cow Queso Fresco & Chipotle wedges, chopped
3 T ketchup
1 T mustard
16 wonton wrappers (typically found in the produce section)
½ c tomatoes, chopped
4 oz (1 cup) reduced fat 2% shredded cheddar cheese

Directions:
1.    Pre-heat the oven to 375. Lightly mist 8 cups in a muffin tin with cooking spray and set aside.
2.    Mist a large skillet with cooking spray and bring to medium heat. Add chopped onions and sauté until cooked. Add ground beef and Hamburger seasoning and cook until meat is browned. Add mushrooms and continue to cook, stirring occasionally, for a few minutes until mushrooms are browned as well.
3.    In a microwavable bowl, combine meat/mushroom mixture, cheese wedges, ketchup and mustard and stir. Microwave for one minute on high. Stir to combine until meat mixture is fully coated.
4.    Push a wonton wrapper into the bottom of each of the eight sprayed cups in the muffin tin. Using about half of the meat mixture, spoon evenly into the wonton wrappers. Follow by sprinkling some of the chopped tomatoes into each cup (using about half the total tomatoes). Sprinkle about half the cheddar cheese evenly over the top of each cup. Press another wonton wrapper on top and repeat the layering steps with the remaining ingredients.
5.    Bake for 18-20 minutes until golden brown. Let cool 5 minutes before removing from muffin tin.

  1. I didnt have the queso cheese from laughing cow but I had the blue cheese so I put a couple tablespoons of hot sauce anling with the laughing cow blue cheeseand it was amazing. These "cupcakes" are amazing and easy.for me im a single mom of a ten month old and she loves them too...thanks so much :)

  6. I have looked (and asked) at Trader Joe's, Fresh Market (like Whole Foods), Acme (convetional grocery store) and Target, but have not found wonton wrappers anywhere! Do you think I could use phyllo dough?

  11. Another hit at our house, Emily! My husband raved over this - he loved the crunch of the wonton, and the bite of the mustard. I used some sundried tomato and garlic and herb Laughing Cow, since I was out of the chipotle. I also topped my son's cupcake with some diced dill pickles - he liked the addition. I'm excited that there are wonton wrappers left - we'll try the Buffalo Chicken cupcakes next!

  13. I just found your blog today and I made these for dinner tonight and they were delicious!!!!!! My husband loved them too! I did use ground turkey instead of ground beef but they still came out awesomely yummy!!Thank you so much for sharing! I am going to make your sausage, egg, and cheese hashbrown cups in the morning, I can't wait! I'm sure they will be just as tasty!

  17. for those having trouble finding wonton wrappers i know some local food stores will not have then... I actually went to a Asian food market to get them and go about 72 wrappers for only $1.38.... I CAN'T wait to make all the different "cupcakes"

  19. Yummy! I made these tonight, but didn't have the Queso cheese, so I used two wedges of Swiss and added a little more cheddar cheese to the hamburger mix and they turned out yummy! :-)

  21. These were fantastic!!! I made them last night for my family (hiding in the kitchen while I chopped all those mushrooms - so my sons wouldn't see). They were a hit! They can't wait to have them again.

    My grocery didn't have the McCormick's hamburger seasoning, so I used Weber Gourmet Burger. They came out well . . . we decided they were almost like a creamy philly cheesesteak. Well done. Can't wait to make more 'cupcakes' soon!

  23. only question i have for these is how to keep the wonton wrappers crisp? I live in high altitude and the edges are crisp but not the rest of it. I put them in for 17 min & they weren' crisp and then for another 5 min and still aren't crisp? What is your trick for keeping the wrappers crisp?

    1. They actually aren't meant to get crispy all over. Only the tops get crispy where the wonton edges stick out of the pan. Hope you like them!

  25. Sooo happy I found you on pinterest! I too have gone main meal muffing nuts! Found lasagna on pinterest then did, meatloaves, crustless quiche, and pizza muffins. I have had a few more ideas but as life is crazy haven't gotten around to trying more. I love that you have done the P+ for us. Nice to not have to measure after you make a meal for the whole fam. One thought for you have you seen the dumpling wrappers? They are round, I used them instead for the lasagna and was able to bump up the amount of meat and keep the same points as the trade off of no corners on the wrappers.

I cooked these today - had to make a substitution with the cheese and use philadelphia with a splash of hot sauce as they don't do that particular Laughing Cow over here in the UK in my supermarket. Absolutely delicious though - Can't wait to eat them tomorrow for lunch at work! Thanks so much for posting this recipe!

  50. Made these for the first time for the Super Bowl and they were a hit. Made them again and took them to my sister-in-law who is recovering from an automobile accident, she loved them.   51. Made these as an appetizer for my son's birthday party and they were a hit. I also made a turkey version since we have several folks who don't eat red meat. Both were quite tasty and I rec'd lots of compliments on the food - thanks! One thing...I was trying to pull the recipe up on my phone (didn't want to have to boot up the computer during the chaos of getting ready) and the link to go to the FAQ page is broken on this page (the link that is embedded in this post).   52. When I made the cupcakes, I had trouble getting the wontons to brown on the bottom which caused them to be soggy. Any ideas on how to prevent that? Other than that, delicious!
